  • 2 tablespoons crushed pistachios or walnuts (optional)
  • Lemon zest from 1/2 lemon (optional)

Instructions

  1. Prepare the pomegranate seeds: Cut fresh pomegranate in half and gently tap the back with a wooden spoon over a bowl to release about 1/2 cup (75g) seeds, removing any white pith.
  2. Mix the cottage cheese base: In a mixing bowl, combine 1 cup (225g) cottage cheese with 1/2 teaspoon vanilla extract and optional lemon zest. Stir gently to keep curds creamy.
  3. Assemble the bowl: Spoon the cottage cheese mixture into a serving bowl, creating a small well in the center.
  4. Add toppings: Evenly sprinkle 1/2 cup pomegranate seeds over the cottage cheese. Add optional 2 tablespoons crushed nuts and 1 teaspoon chia seeds if desired.
  5. Drizzle honey: Slowly drizzle 2 tablespoons (30ml) honey over the entire bowl.
  6. Final touch and serve: Gently tap the bowl to settle toppings and serve immediately or chill up to 10 minutes before serving.

Notes
