A quick and easy recipe combining creamy blended cottage cheese with crumbled cupcakes and fresh berries, perfect for a light yet indulgent Valentine’s Day breakfast or dessert.

Ingredients

Scale
  • 1 cup (225g) small-curd cottage cheese
  • 1 teaspoon vanilla extract
  • 12 tablespoons honey or maple syrup
  • ½ cup fresh strawberries, sliced (or any fresh/frozen berries, thawed)
  • 2 cupcakes, crumbled into bite-sized pieces (vanilla or red velvet recommended)
  • Pinch of cinnamon
  • Optional toppings: shaved dark chocolate, crushed pistachios, edible rose petals

Instructions

  1. In a mixing bowl, blend 1 cup (225g) of small-curd cottage cheese using a hand mixer or blender on medium speed for 1-2 minutes until creamy and smooth.
  2. Stir in 1 teaspoon vanilla extract, 1-2 tablespoons honey or maple syrup, and a pinch of cinnamon. Mix gently but thoroughly and adjust sweetness to taste.
  3. Crumble 2 cupcakes into bite-sized pieces, removing frosting if overly sweet or dense.
  4. Spoon half of the cottage cheese mixture into a serving bowl. Add a layer of crumbled cupcakes, then half the sliced strawberries (about ¼ cup). Repeat layers with remaining cottage cheese, cupcakes, and strawberries.
  5. Top with optional toppings such as shaved dark chocolate, crushed pistachios, or edible rose petals for extra flair.
  6. Serve immediately or chill for 15-20 minutes to let flavors meld and cupcakes soften slightly.

Notes

Blend cottage cheese to achieve a silky smooth texture. Adjust sweetness carefully as cottage cheese brands vary in tanginess. Use fresh berries for best flavor; frozen berries should be thawed and drained. For drier cupcakes, brush with milk or cream before crumbling to keep moist. Best enjoyed fresh or within 2 days refrigerated. Reheating is not recommended.
