A bright and bubbly oatmeal bowl inspired by mocktails, combining creamy oats with fresh, tangy fruit toppings for a festive and healthy breakfast.

  • 1 cup (90g) rolled oats
  • 1 ¾ cups (420ml) milk of choice (dairy, almond, or oat milk, unsweetened preferred)
  • ½ cup (75g) fresh strawberries, sliced
  • ½ cup (60g) fresh raspberries
  • ¼ cup (60ml) orange juice, freshly squeezed if possible
  • 1 tbsp (15ml) honey or maple syrup (optional)
  • 1 tbsp (12g) chia seeds
  • ½ tsp (2.5ml) vanilla extract
  • Fresh mint leaves (for garnish)
  • ¼ cup (40g) pomegranate arils (optional)

Instructions

  1. In a medium saucepan, combine 1 cup (90g) rolled oats and 1 ¾ cups (420ml) milk of choice. Bring to a gentle boil over medium heat, then reduce to low. Stir occasionally to prevent sticking. Cook for about 8-10 minutes, or until the oats are creamy and tender but still hold their shape.
  2. Stir in ½ tsp (2.5ml) vanilla extract and 1 tbsp (15ml) honey or maple syrup if using. Mix well. Remove from heat.
  3. While oats cook, in a small bowl combine ¼ cup (60ml) fresh orange juice with the sliced strawberries (½ cup / 75g) and raspberries (½ cup / 60g). Let the fruit soak for about 5 minutes to absorb the citrusy zing.
  4. Spoon the cooked oatmeal into your serving bowl. Pour the fruity orange juice mixture over the top, letting some juice soak into the oats.
  5. Sprinkle 1 tbsp (12g) chia seeds and ¼ cup (40g) pomegranate arils over the bowl.
  6. Finish with a few fresh mint leaves to give it that mocktail freshness and a pop of green color.
  7. Serve immediately warm, or let cool slightly. For a chilled version, cover and refrigerate for 30 minutes before eating.

Notes

Use rolled oats for best texture; cook slowly on low heat to avoid gummy oats. Freshly squeezed orange juice adds brightness. Adjust sweetness to taste and avoid soaking fruit too long to prevent mushiness. For vegan version, use plant-based milk and maple syrup or agave instead of honey. Can be prepared as overnight oats by soaking oats with milk and orange juice overnight.
