  • 1 cup (240ml) milk of choice (dairy or plant-based)
  • 1/3 cup (50g) pomegranate seeds
  • 1 to 2 tablespoons (15-30ml) honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • Optional toppings: chopped nuts (almonds or walnuts), chia seeds, Greek yogurt

Instructions

  1. Cut the pomegranate in half carefully. Hold it over a bowl and tap the back with a wooden spoon to release the seeds (arils). Set aside about 1/3 cup (50g) for topping.
  2. In a medium saucepan, combine 1/2 cup (45g) rolled oats, 1 cup (240ml) milk of choice, a pinch of salt, and 1/4 teaspoon cinnamon. Bring to a gentle boil over medium heat, stirring occasionally to prevent sticking.
  3. Once boiling, reduce heat to low and simmer for about 5-7 minutes until the oats are tender and creamy. The texture should be thick but still spoonable.
  4. Remove the pan from heat and stir in 1/2 teaspoon vanilla extract. Taste the oatmeal and adjust sweetness if needed.
  5. Spoon the cooked oatmeal into your serving bowl. Generously sprinkle the pomegranate seeds over the top.
  6. Drizzle 1 to 2 tablespoons (15-30ml) of honey over the bowl. The honey should be warm or at room temperature to flow easily.
  7. Add optional toppings such as chopped nuts, chia seeds, or a dollop of Greek yogurt if desired.

Notes

Use rolled oats for a creamy texture and avoid instant oats to prevent mushiness. Warm honey slightly if too thick for easy drizzling. Fresh pomegranate seeds provide the best juicy burst; frozen can be used if fresh is unavailable. Adjust oats-to-liquid ratio to achieve desired creaminess. For vegan version, substitute honey with maple syrup or agave nectar.
