Irresistible Valentines Strawberry Cottage Cheese Bowl

A quick and easy healthy breakfast bowl combining fresh strawberries, creamy cottage cheese, honey, and optional nuts and seeds for a festive and nourishing start to your day.

Ingredients

  • 1 cup (240 ml) small-curd cottage cheese
  • 1 cup (150 g) fresh strawberries, washed and thinly sliced
  • 12 tablespoons (1530 ml) honey, raw or local
  • 1 teaspoon (5 ml) vanilla extract
  • 1 tablespoon (15 g) chia seeds (optional)
  • 2 tablespoons (1520 g) toasted almonds or walnuts
  • 1 teaspoon lemon zest (optional)
  • Pinch of ground cinnamon

Instructions

  1. Gently wash and pat dry 1 cup (150 g) of fresh strawberries. Slice them thinly. If using frozen strawberries, thaw completely and drain excess liquid.
  2. Toast 2 tablespoons (15-20 g) of almonds or walnuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently until golden brown and aromatic. Remove from heat and let cool.
  3. In a medium bowl, combine 1 cup (240 ml) small-curd cottage cheese with 1 teaspoon (5 ml) vanilla extract and 1-2 tablespoons (15-30 ml) honey. Stir gently until smooth and creamy. Adjust honey to taste.
  4. Add 1 teaspoon lemon zest and a pinch of ground cinnamon to the cottage cheese mixture and fold in carefully.
  5. Layer the bowl by spooning half the cottage cheese mixture into a serving bowl, then half the sliced strawberries, followed by half the toasted nuts and chia seeds if using. Repeat the layers, finishing with a few strawberry slices and nuts on top.
  6. Drizzle extra honey over the top if desired. Serve immediately or chill for 10 minutes before serving.

Notes

Do not overmix the cottage cheese to avoid watery texture. Slice strawberries thinly for better flavor release. Toast nuts gently over medium heat to avoid burning. Keep nuts separate if preparing ahead to maintain crunch. Cottage cheese can be lightly blended for smoother texture. For dairy-free, substitute with coconut or almond yogurt and use maple syrup instead of honey.
