  • 1 cup (240 ml) Greek yogurt (full-fat preferred, low-fat works too)
  • 12 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup fresh strawberries, sliced
  • ¼ cup fresh blueberries
  • 2 tablespoons chopped nuts (walnuts or almonds), toasted
  • 1 tablespoon dark chocolate shavings (optional, 70% cocoa recommended)
  • 1 tablespoon toasted coconut flakes
  • 1 teaspoon chia seeds (optional)
  • A few fresh mint leaves for garnish

Instructions

  1. In a mixing bowl, combine 1 cup (240 ml) of Greek yogurt with 1 teaspoon of vanilla extract. Stir gently until smooth and fully incorporated.
  2. Drizzle 1 to 2 tablespoons of honey or maple syrup over the yogurt mixture. Mix well until evenly distributed and taste to adjust sweetness.
  3. Toast 2 tablespoons of chopped nuts and 1 tablespoon of coconut flakes in a small skillet over medium heat for 3-4 minutes, stirring frequently until golden and fragrant. Alternatively, toast in an oven at 350°F (175°C) for 5 minutes, checking frequently. Let cool.
  4. Wash and slice ½ cup of strawberries and rinse ¼ cup of blueberries. Pat dry.
  5. Spoon the sweetened vanilla yogurt into a serving bowl. Arrange the sliced strawberries and blueberries on top.
  6. Sprinkle the toasted nuts and coconut flakes evenly over the fruit. Add 1 teaspoon of chia seeds if using.
  7. Add 1 tablespoon of dark chocolate shavings for a decadent touch, if desired.
  8. Garnish with a few fresh mint leaves and serve immediately.

Notes

If yogurt is too thick, stir in a splash of milk or almond milk to loosen. Use room temperature yogurt for better flavor melding. Toast nuts and coconut carefully to avoid burning. Prepare toppings just before serving to keep crunch. Can substitute dairy-free yogurt and maple syrup for a vegan version.
