  • 6 large eggs (hard-boiled and peeled)
  • 3 oz cream cheese (softened, about 6 tbsp)
  • 23 tbsp mayonnaise
  • 1/4 cup sharp cheddar cheese, finely shredded
  • 3 strips bacon, cooked and crumbled
  • 2 medium fresh jalapeño peppers (1 minced for filling, 1 thinly sliced for topping)
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1/4 tsp garlic powder
  • Smoked paprika (for garnish)
  • Salt and black pepper, to taste
  • Green onions or chives, thinly sliced (for garnish)

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about 1 inch. Bring to a boil over medium-high heat, then lower the heat and simmer for 10-12 minutes.
  2. Transfer the cooked eggs to a bowl of ice water and let cool for at least 5 minutes. Peel the eggs under running water and pat dry.
  3. Slice each egg in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Set the egg whites aside on a platter.
  4. Add softened cream cheese, mayonnaise, shredded cheddar, minced jalapeño, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper to the yolks. Mash together until mostly smooth. For extra creaminess, use a hand mixer or food processor.
  5. Fold in 2/3 of the crumbled bacon, reserving the rest for topping. Taste and adjust seasoning as needed.
  6. Spoon or pipe the filling into each egg white half, piling the filling high if desired.
  7. Top each deviled egg with a sprinkle of shredded cheddar, reserved bacon, jalapeño rings, smoked paprika, and sliced green onions or chives.
  8. Serve immediately or chill for up to 2 hours before serving.

Notes

For easier peeling, use eggs that are a few days old and cool them quickly in an ice bath. Adjust the heat by removing or leaving jalapeño seeds. Make the filling ahead and fill eggs just before serving for best texture. For vegetarian, skip bacon and use crispy onions or nuts for crunch.
