  • 1 cup (240ml) fresh salsa (chunky pico de gallo style preferred)
  • 1 ripe avocado, diced
  • 2 stalks green onions, thinly sliced
  • 1 small jalapeño, thinly sliced (optional)
  • ½ cup (120ml) sour cream or Greek yogurt (dairy-free if needed)
  • A handful fresh cilantro, chopped
  • Lime wedges for serving
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt and pepper to taste

Instructions

  1. Bring a medium saucepan of water to a gentle boil. Carefully lower 4 large eggs into the water using a slotted spoon. Boil for exactly 6 minutes for jammy yolks.
  2. Remove eggs and transfer to an ice bath for 5 minutes to stop cooking. Peel gently and set aside.
  3. Preheat the oven to 375°F (190°C).
  4. In a small bowl, combine rinsed black beans with smoked paprika, cumin, salt, and pepper. Toss to coat evenly.
  5. Spread a generous layer of tortilla chips in a large baking dish or oven-safe bowl.
  6. Sprinkle half of the seasoned black beans evenly over the chips.
  7. Add half of the shredded cheddar and Monterey Jack cheese over the beans.
  8. Repeat with another layer of chips, beans, and cheese, ensuring cheese covers the chips well.
  9. Place the dish in the oven for 10-12 minutes, or until cheese is bubbly and golden.
  10. Remove nachos from oven and immediately top with diced avocado, sliced jalapeños, green onions, and fresh salsa.
  11. Cut soft-boiled eggs in half and arrange gently on top of the nachos.
  12. Drizzle sour cream or Greek yogurt over the entire bowl and sprinkle chopped cilantro.
  13. Serve with lime wedges and squeeze lime juice over before eating.
