A quick and easy sweet side dish featuring tender roasted carrots coated in a luscious maple bourbon glaze with a hint of garlic and thyme.

  • 1 tablespoon olive oil
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • 1/4 cup (60 ml) pure maple syrup
  • 2 tablespoons (30 ml) bourbon
  • 2 tablespoons (28 grams) unsalted butter
  • 1 tablespoon (12 grams) brown sugar
  • 1 clove garlic, minced (optional)
  • 1 teaspoon fresh thyme leaves (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and cut 1 pound (450 grams) of carrots into uniform sticks or rounds about 1/2 inch thick.
  3. In a mixing bowl, toss the carrots with 1 tablespoon olive oil, a pinch of salt, and freshly ground black pepper until well coated.
  4. Spread the carrots in a single layer on the prepared baking sheet. Roast for about 20 minutes, stirring halfway through, until tender and starting to caramelize.
  5. While the carrots roast, combine 1/4 cup maple syrup, 2 tablespoons bourbon, 2 tablespoons unsalted butter, and 1 tablespoon brown sugar in a small saucepan over medium heat. Stir constantly until the mixture thickens slightly and becomes glossy, about 5 minutes. Avoid boiling aggressively.
  6. Stir in the minced garlic and fresh thyme leaves into the glaze and cook for another minute to release flavors.
  7. Remove the roasted carrots from the oven and transfer them to a bowl. Pour the warm maple bourbon glaze over the carrots and toss gently to coat evenly.
  8. Return the glazed carrots to the baking sheet and roast for an additional 5 minutes to set the glaze.
  9. Taste and adjust salt and pepper as needed. Serve warm immediately.

Notes

For a dairy-free or vegan version, substitute butter with coconut oil or vegan margarine and ensure bourbon is vegan-friendly. Avoid overcrowding the pan for proper caramelization. Stir glaze constantly to prevent burning. If glaze is too thin, cook longer on low heat. Adjust bourbon amount to taste if concerned about strong alcohol flavor.
