Tender roasted carrots glazed with a sweet and smoky maple syrup mixture, perfect as a simple yet impressive side dish for any occasion.

  • 1 pound (450g) fresh carrots, peeled and cut into sticks or halves
  • 3 tablespoons pure maple syrup (Grade A Amber)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh thyme leaves, roughly chopped
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. Peel and cut 1 pound of carrots into sticks about 3 inches long and 1/2-inch thick. Place them in a large mixing bowl.
  3. In a small bowl, whisk together 3 tablespoons pure maple syrup, 2 tablespoons olive oil, 1 teaspoon fresh thyme leaves, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon garlic powder if using.
  4. Pour the glaze over the carrots and toss until every piece is well coated.
  5. Spread the glazed carrots in a single layer on the prepared baking sheet, avoiding overcrowding.
  6. Roast for 12-15 minutes, then flip the carrots using tongs and roast for another 12-15 minutes until tender and caramelized.
  7. Remove from oven, stir gently, adjust seasoning if needed, and serve warm garnished with fresh thyme or chopped parsley.

Notes

Toss carrots in the glaze before roasting to prevent burning. Flip carrots halfway through roasting for even caramelization. Adjust roasting time for carrot thickness. Optional substitutions include coconut oil for olive oil and honey or agave nectar for maple syrup. Fresh thyme can be swapped with rosemary or sage.
