  • 2 cups shredded cooked chicken (boneless, skinless chicken breasts)
  • 4 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 minced garlic cloves
  • 1 diced onion
  • 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Fresh basil (chopped for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot over medium heat.
  2. Add 1 diced onion and sauté for 3-4 minutes until softened.
  3. Stir in 2 minced garlic cloves and cook for 1 minute until fragrant.
  4. Add 4 cups of chicken broth and bring to a gentle boil.
  5. Reduce heat to medium-low and stir in 1 cup heavy cream and 1/2 cup grated Parmesan cheese. Stir until the cheese melts and the soup is creamy.
  6. Mix in 2 cups shredded cooked chicken, 1/2 cup sun-dried tomatoes, and 1 teaspoon Italian seasoning. Simmer for 10 minutes.
  7. Season with salt and pepper to taste. Taste and adjust as needed.
  8. Remove from heat and garnish with freshly chopped basil.
  9. Serve hot with crusty bread or crackers. Enjoy!

Notes

If the soup feels too thick, add a splash of chicken broth to thin it out. Stir frequently to prevent the cream from separating. Use fresh Parmesan for the best flavor.
