Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or nonstick spray and set aside.
  2. Make the cinnamon streusel topping: In a medium bowl, combine ½ cup brown sugar, ½ cup flour, and 2 teaspoons cinnamon. Cut in ¼ cup cold, cubed butter using a pastry cutter or two forks until mixture resembles coarse crumbs. Set aside.
  3. Prepare the batter: In a large bowl, cream together 1 cup softened unsalted butter and 1 ½ cups granulated sugar until light and fluffy, about 3 to 4 minutes with an electric mixer.
  4. Beat in 2 large eggs one at a time, then stir in 2 teaspoons vanilla extract until well combined.
  5. In a separate bowl, whisk together 2 ½ cups all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt. Gradually add this to the wet mixture, mixing just until incorporated.
  6. Gently fold in 8 ounces softened cream cheese and 1 ½ cups blueberries, being careful not to overmix.
  7. Spread the batter evenly into the prepared pan, then sprinkle the cinnamon streusel topping generously over the surface.
  8. Bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Notes

If the streusel browns too quickly, tent the cake loosely with foil halfway through baking. For a more pronounced cream cheese swirl, dollop half the cream cheese mixture into the batter and swirl gently with a knife before adding blueberries. Use softened butter and cream cheese for best creaming results. Fold blueberries gently to avoid bruising.
