  • 1 cup (90g) rolled oats (old-fashioned)
  • 1 cup (240ml) unsweetened apple juice (pure, no sugar added)
  • 1 medium fresh apple (about 150g), chopped (preferably Fuji or Gala)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Chop your apple into small, bite-sized pieces, keeping the skin on for extra fiber and nutrients.
  2. In a bowl or directly in your jar, combine rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Stir well to evenly distribute the cinnamon.
  3. Pour in unsweetened apple juice and vanilla extract if using. Stir thoroughly to combine all ingredients.
  4. Fold in the chopped apple pieces gently so they are evenly spread.
  5. Cover the jar or container tightly and refrigerate for at least 6 hours, ideally overnight.
  6. In the morning, stir the oats well. If too thick, add a splash of unsweetened almond or coconut milk to loosen the texture.
  7. Optionally, top with extra apple slices or a sprinkle of cinnamon before serving.

Notes

Use pure, unsweetened apple juice without preservatives or added sugars. Adjust apple juice amount to achieve desired texture. Stir oats before serving to restore creaminess. Can add a splash of almond or coconut milk in the morning for creaminess. Store leftovers in airtight container in fridge up to 3 days. Freeze portions for longer storage.
