Perfect Baked Brie en Croute

A quick and easy recipe featuring creamy brie wrapped in crispy golden puff pastry, perfect for entertaining and cozy gatherings.

  • 1 wheel Brie cheese (8 oz / 225 g), rind on
  • 1 package puff pastry sheets, thawed
  • 1 large egg, beaten (for egg wash)
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1/4 cup chopped nuts (walnuts or pecans, optional)
  • Optional fillings: 2 tbsp dried cranberries or 3 tbsp fig jam

Instructions

  1. Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. On a lightly floured surface, roll out thawed puff pastry sheet to about 12×12 inches (30×30 cm).
  3. Remove plastic wrapping from brie and place in center of pastry. Optionally slice off top rind for easier melting.
  4. Drizzle honey over brie, sprinkle with thyme leaves, chopped nuts, and optional dried cranberries or fig jam.
  5. Fold puff pastry up and around brie, pinching seams to seal. Trim excess pastry and decorate top if desired.
  6. Brush entire pastry surface with beaten egg for a golden finish.
  7. Lightly score a pattern on top of pastry without cutting through to allow steam to escape.
  8. Bake for 20-25 minutes until puff pastry is puffed and deep golden brown. Tent with foil after 15 minutes if browning too quickly.
  9. Remove from oven and let rest on a cooling rack for 5-10 minutes to set cheese.
  10. Serve warm, cut into wedges with crackers, sliced baguette, or fresh fruit.

Notes

Keep puff pastry cold before baking to ensure maximum puff and flakiness. Do not overfill to avoid sogginess. Score pastry top lightly to allow steam to escape without cutting through. Rest baked brie before slicing to prevent cheese from oozing out. Tent with foil if pastry browns too quickly.
