  • 2 tablespoons hot honey (or 1 teaspoon chili flakes/cayenne mixed into regular honey)
  • ½ cup (50 grams) pecans, toasted
  • 1 teaspoon fresh thyme, finely chopped (optional)
  • 1 teaspoon olive oil or melted butter (for toasting pecans)
  • Crackers or sliced baguette, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the pecans in a skillet over medium heat with olive oil or melted butter for 5-7 minutes until fragrant and golden brown. Remove from heat and set aside.
  3. Place the whole brie wheel in an oven-safe baking dish or small cast-iron skillet. Score the top rind lightly in a crisscross pattern.
  4. Sprinkle chopped fresh thyme evenly over the brie, if using.
  5. Bake the brie on the middle rack for 15-18 minutes until soft to the touch but still holding its shape.
  6. Warm the hot honey gently in a small saucepan or microwave for 15-20 seconds.
  7. Remove the brie from the oven and immediately drizzle the warm hot honey over the top, letting it seep into the scored rind.
  8. Sprinkle the toasted pecans generously on top.
  9. Serve immediately with crackers or sliced baguette.

Notes

Do not overbake the brie to avoid an oily texture. Score the rind lightly to help honey soak in. Toast pecans to enhance flavor. Warm honey just enough to drizzle smoothly but keep some thickness. Serve with sturdy crackers or toasted bread to avoid mess.
