Ingredients

Scale
  • 1 cup (227g) unsalted butter, browned
  • 2 tablespoons bourbon
  • 3/4 cup (150g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) semisweet or dark chocolate chips

Instructions

  1. Brown the butter: Place 1 cup (227g) unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts and foams. When it turns golden amber and smells nutty, remove from heat and let cool for 5 minutes.
  2. Mix wet ingredients: In a mixing bowl, combine browned butter, 2 tablespoons bourbon, 3/4 cup light brown sugar, and 1/4 cup granulated sugar. Whisk until smooth. Add 1 large room-temperature egg and 1 teaspoon vanilla extract, whisking until fully incorporated.
  3. Combine dry ingredients: In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  4. Bring dough together: Gradually add dry ingredients to wet mixture, stirring gently with a wooden spoon or spatula until just combined. Dough will be slightly sticky.
  5. Add chocolate chips: Fold in 1 1/2 cups semisweet or dark chocolate chips evenly through the dough.
  6. Chill dough (optional): Refrigerate dough in an airtight container for 30 minutes to 1 hour for thicker cookies.
  7. Preheat oven and prepare baking sheets: Set oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  8. Scoop and bake: Using a cookie scoop or tablespoon, place dough balls about 2 inches apart on baking sheets. Bake for 10-12 minutes until edges are golden brown but centers are slightly soft.
  9. Cool and enjoy: Let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Brown the butter slowly and stir constantly to avoid burning. Chilling the dough helps prevent spreading and yields thicker cookies. Use quality butter and chocolate for best flavor. Bourbon cooks off during baking, leaving subtle warmth without boozy taste. Dough can be frozen for later baking.
