  • 1 1/2 cups (190g) crushed chocolate wafer cookies or chocolate graham crackers
  • 1/4 cup (50g) granulated sugar
  • 6 tbsp (85g) unsalted butter, melted
  • 1 cup (240g) pumpkin puree (not pumpkin pie filling)
  • 1/2 cup (120ml) heavy cream
  • 1/3 cup (70g) light brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • Pinch of salt
  • Optional toppings: Whipped cream, shaved dark chocolate, crushed pecans

Instructions

  1. Preheat your oven to 350°F (175°C). In a food processor, pulse the chocolate wafer cookies until finely crushed. Transfer the crumbs to a mixing bowl and stir in the sugar and melted butter until the mixture resembles wet sand. Press the mixture evenly into the tart pan, making sure to cover the base and sides. Bake for 8-10 minutes, then let it cool completely.
  2. In a large bowl, whisk together the pumpkin puree, heavy cream, brown sugar, eggs, vanilla, cinnamon, ginger, nutmeg, and salt until smooth. Pour the filling into the cooled crust, spreading it out evenly.
  3. Place the tart on a baking sheet and bake at 350°F (175°C) for 40-45 minutes, or until the filling is set but slightly jiggles in the center. Remove from the oven and let it cool to room temperature.
  4. Refrigerate the tart for at least 2 hours before serving. Slice and serve with whipped cream, shaved dark chocolate, or pecans if desired.
