  • 1 cup (226g) unsalted butter, softened to room temperature
  • 2/3 cup (135g) granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • A pinch of salt
  • Optional: A sprinkle of coarse sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes using an electric mixer.
  3. Mix in the egg yolks one at a time, followed by the vanilla extract. Scrape down the sides of the bowl as needed.
  4. Gradually add the flour and salt to the wet ingredients. Mix until just combined—don’t overmix.
  5. Turn the dough out onto a lightly floured surface. Roll it out to about 1/4-inch (6mm) thickness.
  6. Use cookie cutters to cut out shapes and place them on the prepared baking sheet, leaving about 1 inch (2.5cm) of space between each cookie.
  7. Optional: Sprinkle coarse sugar on top of the cookies for added texture and sparkle.
  8. Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
