  • 6 tbsp unsalted butter (85 g), softened
  • 3 cloves fresh garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme, finely chopped (optional)
  • 1 tbsp fresh lemon juice
  • Salt to taste (kosher or sea salt preferred)
  • Freshly ground black pepper to taste
  • 1 bunch asparagus (about 1 lb / 450 g), trimmed
  • 2 tbsp olive oil
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Using sharp kitchen scissors, carefully cut down the top shell of each lobster tail lengthwise, stopping just before the tail fan. Gently pull the lobster meat upward, resting it on top of the shell.
  3. In a small saucepan over low heat, melt the butter slowly. Add minced garlic, fresh parsley, thyme, lemon juice, salt, and pepper. Let it simmer gently for 3-4 minutes, stirring occasionally to infuse flavors without browning the garlic. Remove from heat.
  4. On a rimmed baking sheet, toss trimmed asparagus with olive oil, salt, and pepper. Spread in a single layer.
  5. Place the lobster tails on the baking sheet alongside asparagus. Use a pastry brush to generously coat the lobster meat with the garlic herb butter. Reserve some butter for basting halfway through cooking.
  6. Roast in the preheated oven for 12-15 minutes. Halfway through, brush the lobster meat again with the reserved butter to keep it moist and flavorful.
  7. Check doneness: lobster meat should be opaque and firm but still tender; asparagus should be vibrant green with slightly crisp tips.
  8. Serve immediately, drizzling any remaining garlic herb butter over both lobster and asparagus.
