  • 8 ounces smoked salmon, thinly sliced
  • 68 buttery croissants or mini Danish pastries or puff pastry bites
  • 4 ounces cream cheese, softened
  • Fresh herbs (dill and chives), roughly chopped or sprigs for garnish
  • 1 medium cucumber, thinly sliced
  • 1 lemon, cut into wedges
  • 2 tablespoons capers, drained
  • A handful of cherry tomatoes, halved
  • A small bowl of fresh berries (blueberries or raspberries)
  • A small handful of toasted walnuts or almonds
  • ½ cup mixed olives (green and black), pitted
  • Crackers or breadsticks (water crackers or thin, crisp breadsticks)

Instructions

  1. Wash and slice the cucumber thinly (about 1/8 inch thick). Halve the cherry tomatoes and rinse the fresh berries gently. Cut the lemon into wedges and roughly chop or leave whole sprigs of dill and chives for garnish.
  2. Preheat oven to 350°F (175°C). Warm the croissants and pastries for 5-7 minutes until lightly golden and flaky. Transfer to your serving board once warm.
  3. Mix the cream cheese with finely chopped chives or dill if desired. Dollop on the board or spread lightly on some crackers.
  4. Gently fan out the smoked salmon slices on the board, avoiding overcrowding. Use tongs or fingers carefully to prevent breaking the slices.
  5. Place cucumber slices, capers, olives, cherry tomatoes, and fresh berries in small bowls or neatly arranged piles around the board. Scatter toasted nuts for crunch and tuck lemon wedges at convenient spots for squeezing.
  6. Sprinkle fresh herbs over the salmon and around the board for color and aroma. Optionally, drizzle good-quality olive oil over the cream cheese or salmon.
  7. Serve immediately, encouraging guests to mix and match flavors.

Warm pastries just before serving to keep them flaky. Avoid overcrowding the board to maintain a neat presentation and distinct flavors. Use small bowls for wet or briny items to prevent sogginess. Thinly slice cucumber to avoid overpowering the salmon. Store leftovers separately and reheat pastries at 325°F for 5-7 minutes.
