  • ¼ cup sour cream
  • 2 tsp lemon zest (freshly grated)
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup wild huckleberries, fresh or frozen (thawed and drained if frozen)
  • Powdered sugar for dusting (optional)
  • Extra lemon zest or a few fresh huckleberries for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Line an 8×8 inch pan with parchment paper, letting some overhang for easy removal.
  2. Make the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until evenly coated and press firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes. Remove and let cool slightly.
  4. Prepare the filling: Beat softened cream cheese with sugar until smooth and creamy.
  5. Add eggs one at a time, beating well after each addition.
  6. Mix in sour cream, lemon zest, lemon juice, and vanilla extract until just combined.
  7. Gently fold in wild huckleberries using a spatula to avoid crushing them.
  8. Pour the filling over the crust and spread evenly.
  9. Bake for 35-40 minutes until edges are set but center has a slight jiggle.
  10. Turn off oven and leave bars inside with door slightly open for 30 minutes.
  11. Remove from oven and cool completely on a wire rack.
  12. Refrigerate for at least 4 hours or overnight.
  13. Before serving, dust with powdered sugar and garnish with lemon zest or fresh huckleberries if desired. Cut into bars using parchment overhang.
