  • 1 cup (240g) canned pumpkin puree (not pumpkin pie filling)
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 8 oz (225g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line your muffin tin with paper liners or grease it well.
  2. In a medium bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  5. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula. Be careful not to overmix; the batter should be thick and slightly lumpy.
  6. Spoon about 2 tablespoons of pumpkin batter into each muffin cup. Add 1 tablespoon of cream cheese filling on top, then cover with another tablespoon of pumpkin batter.
  7. Bake for 18-22 minutes, or until a toothpick inserted near the edge (avoiding the cream cheese center) comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Don’t overmix the batter to ensure tender muffins. Use room temperature ingredients for smooth mixing. Freshly ground spices enhance the flavor.
