  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 cup (240g) canned pumpkin puree
  • 1 teaspoon vanilla extract
  • ¾ cup (95g) all-purpose flour (for crumb topping)
  • ½ cup (100g) brown sugar, packed
  • ½ teaspoon ground cinnamon (for crumb topping)
  • 6 tablespoons (85g) unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan with butter or nonstick spray.
  2. In a medium bowl, mix the flour, brown sugar, and cinnamon for the crumb topping. Add melted butter and stir until crumbly. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. In another bowl, whisk the sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Pour the batter into the prepared pan and spread evenly. Sprinkle the crumb topping generously over the batter.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool for at least 15 minutes before slicing. Serve warm or at room temperature.
