  • 2 large English cucumbers (seedless and thin-skinned work best for easy rolling)
  • 8 oz (225 g) full-fat cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 teaspoon lemon zest, freshly grated
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: a few drops of hot sauce or finely chopped chives

Instructions

  1. Wash and dry the cucumbers thoroughly. Using a mandoline or sharp knife, slice the cucumbers lengthwise into thin strips about 1/8 inch (3 mm) thick. Aim for about 20-24 strips depending on the size of your cucumbers. Lay them flat on paper towels to absorb excess moisture for about 5 minutes.
  2. In a mixing bowl, combine 8 oz softened cream cheese with 2 tablespoons finely chopped fresh dill, 1 teaspoon lemon zest, 1/2 teaspoon garlic powder, and a pinch of salt and pepper. Mix until smooth and well combined. Taste and adjust seasoning if needed. Add a few drops of hot sauce if desired.
  3. Take one cucumber strip and spread a thin layer (about 1 tablespoon) of the cream cheese mixture evenly over its entire surface.
  4. Starting at one end, gently but firmly roll the cucumber strip into a tight spiral. Place the finished roll seam-side down on a serving platter or tray. Repeat with remaining strips until all filling is used.
  5. Cover the platter with plastic wrap and refrigerate for at least 15 minutes to let the flavors meld and the cream cheese firm up a bit (optional but recommended).
  6. Garnish with extra dill sprigs or freshly cracked black pepper if desired. Serve chilled as a refreshing snack or appetizer.

Slice cucumbers thinly and evenly for easy rolling. Pat cucumber strips dry to prevent sogginess. Soften cream cheese to room temperature for smooth spreading. Store roll-ups in an airtight container lined with paper towels and consume within 24 hours. Avoid freezing as texture will be compromised.
