A vibrant, layered frozen cocktail inspired by the nostalgic bomb pop popsicle, combining frozen berries, vodka, and a splash of soda for a refreshing summer drink.

  • 1 cup (150g) frozen strawberries
  • 1 cup (150g) frozen blueberries
  • 2 tablespoons (30ml) fresh lemon juice
  • 2 tablespoons (30ml) simple syrup (optional)
  • 4 ounces (120ml) vodka
  • 1 cup (240ml) club soda or sparkling water
  • 1 cup (240g) ice cubes
  • Fresh mint leaves (a few sprigs, for garnish)

Instructions

  1. Prepare the Red Layer: Add 1 cup frozen strawberries, 1 tablespoon fresh lemon juice, and 1 tablespoon simple syrup into the blender. Add about 1/3 cup ice cubes. Blend until smooth but thick enough to hold shape. Pour into glass filling about one-third. Freeze for 5 minutes to set.
  2. Prepare the White Layer: Rinse blender. Combine 1 cup club soda, 2 ounces vodka, and 1 tablespoon lemon juice. Add 1/3 cup ice cubes. Pulse gently to chill without frothing. Pour carefully over red layer. Freeze for 5 minutes to keep layers distinct.
  3. Prepare the Blue Layer: Clean blender. Add 1 cup frozen blueberries, 1 tablespoon lemon juice, 1 tablespoon simple syrup, and 1/3 cup ice cubes. Blend until smooth and thick. Pour gently over white layer. Garnish with fresh mint leaves.

Notes

Pour each layer slowly over the back of a spoon to avoid mixing colors. Freeze 5 minutes between layers to keep them distinct. Use frozen fruit for best texture. Adjust sweetness with simple syrup as needed. For non-alcoholic version, omit vodka and increase sparkling water.
