Refreshing Pineapple Coconut Punch

A quick and easy non-alcoholic summer punch combining tangy pineapple juice with creamy coconut milk and a splash of sparkling water for a refreshing tropical drink.

Ingredients

  • 3 cups pineapple juice (fresh or 100% pure bottled)
  • 1 cup full-fat chilled coconut milk
  • 1 to 1.5 cups chilled sparkling water
  • 2 tablespoons fresh lime juice (about 12 limes)
  • 1 to 2 tablespoons honey or agave syrup (optional)
  • Ice cubes or frozen pineapple chunks
  • Fresh pineapple chunks (optional, for garnish)
  • Mint leaves (optional, for garnish)

Instructions

  1. Chill pineapple juice, coconut milk, and sparkling water for 30 minutes to 1 hour.
  2. Juice 1 to 2 limes to yield about 2 tablespoons of fresh lime juice; strain out seeds.
  3. In a large pitcher, combine pineapple juice and chilled coconut milk; stir gently until smooth and creamy.
  4. Taste the mixture and add honey or agave syrup if additional sweetness is desired; stir to combine.
  5. Add fresh lime juice and stir to balance the sweetness.
  6. Just before serving, gently stir in chilled sparkling water to add fizz.
  7. Add plenty of ice cubes or frozen pineapple chunks to keep the punch cold.
  8. Garnish with fresh pineapple chunks and mint leaves.
  9. Serve immediately in tall glasses.

Notes

Use chilled ingredients to keep the punch refreshing without diluting flavors. Add sparkling water last to preserve fizz. Frozen pineapple chunks can replace ice to avoid watering down the punch. Adjust sweetness carefully as pineapple juice varies in sweetness. Fresh lime juice is preferred for brightness; lemon juice can be a substitute.
