  • 2 cups fresh strawberries, hulled and sliced
  • 3/4 cup granulated sugar
  • 4 cups cold water
  • 4 cups sparkling water, chilled
  • 1 cup mixed berries (blueberries, raspberries, small strawberry pieces) for ice cubes

Instructions

  1. Make the berry ice cubes: Rinse mixed berries and pat dry. Fill ice cube trays halfway with cold water, add a few berries to each compartment, and freeze until solid (at least 4 hours).
  2. Prepare the lemon syrup: In a mixing bowl, combine granulated sugar with 1 cup hot water. Stir until sugar dissolves completely and let cool slightly.
  3. Juice the lemons until you have about 1 cup fresh lemon juice. Strain to remove seeds.
  4. In a large pitcher, mix the cooled lemon syrup with the fresh lemon juice and 3 cups cold water. Stir well.
  5. Add the sliced strawberries to the pitcher. Cover and refrigerate for at least 30 minutes to let flavors meld.
  6. Just before serving, pour in 4 cups chilled sparkling water. Add the berry ice cubes and gently stir. Serve immediately in tall glasses with extra berries or lemon wheels for garnish if desired.

Notes

Dissolve sugar fully in hot water before adding lemon juice to avoid grittiness. Freeze whole berries in ice cubes to prevent watering down the punch and add flavor. Chill punch with strawberries for at least 30 minutes for best flavor. Add sparkling water just before serving to keep fizz.
