  • 1 cup fresh strawberries, hulled and sliced (or frozen, thawed)
  • 1 cup (8 fl oz) coconut milk, full-fat or light
  • 2 tablespoons coconut cream
  • 2 tablespoons sweetener (honey, agave syrup, maple syrup, or simple syrup), adjust to taste
  • 1/2 teaspoon vanilla extract
  • 1 cup ice cubes
  • 1 teaspoon freshly squeezed lime juice (optional)

Instructions

  1. Rinse and hull about 1 cup (150 g) of fresh strawberries. If using frozen, thaw slightly for easier blending.
  2. In a blender, combine strawberries, 1 cup coconut milk, 2 tablespoons coconut cream, 2 tablespoons sweetener, 1/2 teaspoon vanilla extract, and 1 teaspoon lime juice if using. Blend on high for 30-45 seconds until smooth and creamy.
  3. Add about 1 cup ice cubes and pulse a few times to crush the ice without fully liquefying it.
  4. Taste and adjust sweetness or thickness by adding more sweetener or coconut milk as desired. Pulse again if needed.
  5. Optional: Pour the blend through a fine mesh strainer into a glass for a silky smooth texture, pressing the pulp to extract liquid.
  6. Serve immediately in a chilled glass, garnished with a fresh strawberry slice or mint sprig.

Notes

Use frozen strawberries for a thicker, smoothie-like texture. Adjust sweetness gradually to avoid oversweetening. Pulsing ice instead of blending fully keeps the drink refreshing without dilution. Adding lime juice brightens the flavor. For a fizzy twist, add sparkling water before serving. Store leftovers in the fridge up to 24 hours and shake before serving.
