  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil
  • 2 tablespoons milk (any kind, dairy or plant-based)
  • 1 cup caramel bits or chopped soft caramels
  • 1/2 teaspoon flaky sea salt, plus more for sprinkling
  • Optional: 1/2 cup dark or semi-sweet chocolate chips
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1 teaspoon espresso powder

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, whisk together eggs, vegetable oil, and milk until smooth and glossy.
  3. Add the brownie mix and stir with a sturdy spoon or spatula until a thick, sticky dough forms. If too dry, add a teaspoon of milk at a time.
  4. Fold in caramel bits (or chopped caramels) and sea salt. Add optional chocolate chips, nuts, or espresso powder if desired.
  5. Scoop heaping tablespoons (about 1.5 tbsp each) of dough onto prepared baking sheets, spacing about 2 inches apart. Press extra caramel bits on top if desired.
  6. Bake for 9-11 minutes, until edges are set and centers look slightly underbaked.
  7. Immediately sprinkle tops with a pinch of flaky sea salt after removing from oven.
  8. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature eggs and avoid overmixing the dough. Chill dough for 10-15 minutes if cookies spread too much. Always line baking sheets to prevent caramel from sticking. Cookies taste even better the next day as flavors intensify. Store in an airtight container for up to 4 days or freeze for up to 2 months.
