  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 cup water (to loosen jam if needed)

Instructions

  1. Place the chopped bacon in a cold cast iron skillet. Turn heat to medium and cook slowly, stirring occasionally, until bacon is crispy and fat has rendered, about 15-20 minutes.
  2. Carefully spoon out about half of the rendered bacon fat into a heat-safe container, leaving about 2 tablespoons in the skillet.
  3. Add diced onions to the skillet with reserved bacon fat. Cook over medium heat, stirring frequently, until onions are deeply caramelized and golden brown, about 25-30 minutes.
  4. Stir in minced garlic and cook for 1-2 minutes until fragrant, avoiding burning.
  5. Sprinkle brown sugar evenly over the bacon and onions, then pour in apple cider vinegar. Stir well, scraping browned bits from the skillet bottom.
  6. Lower heat to medium-low and simmer gently, stirring occasionally, until mixture thickens and becomes jammy, about 10-15 minutes. Add water if jam is too thick.
  7. Add black pepper and smoked paprika (if using). Taste and adjust seasoning as needed.
  8. Transfer bacon jam to a clean glass jar or airtight container. Let cool to room temperature before sealing and refrigerating.
