  • 12 large fresh oysters, preferably wild-caught, on the half shell, cleaned and ready to grill
  • 1/2 cup (113g) unsalted butter, softened
  • 4 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • Zest of 1 medium lemon
  • 1 tablespoon fresh lemon juice (optional)
  • Pinch of flaky sea salt (like Maldon)
  • Freshly ground black pepper, to taste
  • Hot sauce or red pepper flakes (optional)
  • Aluminum foil or a grill-safe pan for holding oysters on the grill

Instructions

  1. Prepare the garlic butter: In a small bowl, combine softened unsalted butter with minced garlic, chopped parsley, lemon zest, and a pinch of salt and pepper. Add hot sauce or red pepper flakes if desired. Mix thoroughly and set aside. (5 minutes)
  2. Preheat your grill to medium-high heat (375–400°F). If using charcoal, wait until coals are white-hot. Clean and oil the grates to prevent sticking. (10 minutes)
  3. Shuck the oysters if not pre-shucked, keeping the oyster meat in one half of the shell. Drain excess liquid but keep a little for juiciness. (10-15 minutes)
  4. Arrange oysters on a grill-safe pan or sturdy foil to keep them level. (2 minutes)
  5. Top each oyster with about 1 teaspoon of the prepared garlic butter, covering the meat evenly. (5 minutes)
  6. Place the tray on the grill, close the lid, and cook for 5-7 minutes until the butter is melted, bubbly, and slightly browned. The oyster edges will curl slightly. (5-7 minutes)
  7. Remove the tray from the grill carefully. Optionally, squeeze fresh lemon juice over the oysters. Serve immediately while hot. (2 minutes)

Notes

Avoid overcooking to keep oysters tender and juicy. Rotate the tray if your grill has hot spots. Use fresh garlic and softened butter for best flavor and texture. Serve immediately for best taste. Leftovers can be refrigerated up to 24 hours and reheated gently under a broiler or in a skillet.
