  • 2 tablespoons (30 ml) honey, preferably raw or wildflower
  • 2 tablespoons (30 ml) extra virgin olive oil
  • 2 tablespoons (30 ml) fresh herbs (parsley or thyme, or a mix), chopped
  • ½ cup (75 grams) crumbled feta cheese
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or chili flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the carrots into sticks about 3-4 inches long and roughly ½ inch wide, keeping them uniform for even cooking.
  3. In a large mixing bowl, combine honey, olive oil, about ½ teaspoon salt, and ¼ teaspoon pepper. Whisk until well mixed.
  4. Add the carrots to the bowl and toss thoroughly to coat each piece with the honey-oil mixture.
  5. Spread the carrots evenly on a rimmed baking sheet lined with parchment paper or a silicone mat in a single layer.
  6. Roast in the oven for 25-30 minutes, flipping halfway through, until carrots have deep golden edges and are tender when pierced with a fork.
  7. Remove from the oven and immediately sprinkle fresh herbs and crumbled feta over the top.
  8. Optionally, add a light dusting of smoked paprika or chili flakes for extra flavor.
  9. Serve warm as a side dish or salad topping.

For extra caramelization, broil the carrots for 1-2 minutes at the end, watching closely to avoid burning. Let carrots rest a few minutes after roasting to meld flavors.
