Instructions

  1. Warm the honey and spices: In a small saucepan over low heat, gently warm the honey with red chili flakes and smoked paprika, stirring frequently to avoid burning. Alternatively, microwave in 20-second bursts, stirring in between, until warm and infused but not bubbling or caramelized.
  2. Prepare the goat cheese: Place the goat cheese in a mixing bowl and break it up slightly with a fork or spatula to make blending easier.
  3. Combine honey with cheese: Pour the warm honey mixture over the goat cheese and stir gently until fully incorporated and the dip looks creamy and shiny.
  4. Add fresh herbs: Fold in the chopped thyme, basil, and oregano carefully to distribute evenly without overmixing.
  5. Season: Add sea salt and freshly ground black pepper to taste and stir quickly.
  6. Drizzle with olive oil: Pour the extra virgin olive oil on top to finish.
  7. Let it rest (optional): Allow the dip to sit at room temperature for about 10 minutes to let flavors meld. It can be served immediately if needed.
