  • 1/4 cup (60 ml) Irish whiskey (e.g., Jameson)
  • 2 tablespoons honey (raw or local)
  • 2 tablespoons unsalted butter, cut into pieces
  • 2 cloves fresh garlic, minced
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)
  • 1/2 teaspoon salt
  • Freshly ground black pepper, to taste

Instructions

  1. Peel and cut 1 pound (450 g) of carrots into sticks or rounds about 2-3 inches long, aiming for uniform pieces.
  2. Bring a pot of salted water to a boil, add the carrots, and cook for 5 minutes until just tender but still firm. Drain and set aside.
  3. In a large skillet over medium heat, melt 2 tablespoons of unsalted butter. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant but not browned.
  4. Pour in 1/4 cup (60 ml) Irish whiskey and 2 tablespoons honey. Stir to combine and bring to a gentle simmer. Cook for 3-4 minutes, stirring occasionally, until the mixture thickens slightly and becomes syrupy.
  5. Add the parboiled carrots to the skillet, tossing to coat evenly with the glaze. Sprinkle 1 teaspoon fresh thyme, 1/2 teaspoon salt, and freshly ground black pepper to taste. Cook for another 5 minutes, stirring often, until the carrots are tender and glossy.
  6. Taste for seasoning and adjust if needed. Add a splash more whiskey if a stronger flavor is desired, but do not overpower the natural carrot sweetness.
  7. Transfer to a serving dish and garnish with a fresh thyme sprig if desired. Serve warm.

Notes

Parboil carrots before glazing to ensure tenderness without mushiness. Use medium to medium-low heat when simmering glaze to avoid burning. Can substitute honey with maple syrup and butter with vegan alternatives for a vegan version. Roasting carrots before glazing adds a smoky depth.
