These savory mini beef sliders with caramelized onions are quick, easy, and perfect for casual get-togethers or cozy nights in. The combination of juicy beef and sweet caramelized onions creates a comforting and addictive bite-sized meal.

Ingredients

Scale
  • 1 pound (450g) ground beef, preferably 80/20
  • 2 medium yellow onions, thinly sliced
  • 8 small slider buns (brioche or potato rolls recommended)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • 4 slices cheddar or Swiss cheese (optional)
  • Pickles or lettuce for topping (optional)

Instructions

  1. Heat 2 tablespoons olive oil and 1 tablespoon butter in a skillet over medium-low heat. Add sliced onions and a pinch of salt. Stir occasionally and cook slowly until onions are golden brown and caramelized, about 20-25 minutes. Lower heat if onions start to burn.
  2. While onions caramelize, place ground beef in a mixing bowl. Add Worcestershire sauce, garlic powder, salt, and pepper. Gently mix without overworking the meat.
  3. Divide beef mixture into 8 equal portions (about 2 ounces or 55g each). Shape each into a small, flat patty slightly larger than the slider buns.
  4. Heat the skillet used for onions over medium-high heat. Cook patties 3-4 minutes per side for medium doneness. If using cheese, add a slice on each patty during the last minute and cover the pan to melt.
  5. Lightly toast slider buns in another pan or under a broiler until golden and warm.
  6. Assemble sliders by spreading butter or mayo on buns if desired. Place beef patty on bottom bun, top with caramelized onions, add pickles or lettuce if using, then crown with top bun.
  7. Serve immediately while warm.

Notes

Patience is key when caramelizing onions; cook low and slow to bring out natural sweetness. Avoid overmixing beef to keep patties tender. Press a small dimple in patties before cooking to prevent puffing. Toast buns lightly to prevent sogginess. Leftover caramelized onions can be stored in the fridge up to 4 days. Sliders can be frozen without buns for up to 2 months.
