Savory Pineapple Glazed Ham Steaks Recipe with Perfect Charred Grill Marks

A quick and easy recipe featuring ham steaks glazed with a sweet-savory pineapple mixture, grilled to perfection with irresistible charred marks. Perfect for busy weeknights or special occasions.

  • 4 slices ham steaks, about 6 ounces (170g) each, preferably smoked
  • ½ cup (160g) pineapple preserves
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon ground black pepper
  • 1 tablespoon olive oil or vegetable oil
  • Optional: 4 fresh pineapple rings for garnish or extra caramelized bites

Instructions

  1. Prepare the glaze: In a small bowl, whisk together pineapple preserves, brown sugar, Dijon mustard, apple cider vinegar, and black pepper until smooth and well combined. Set aside.
  2. Preheat your grill pan over medium-high heat and add the olive oil, swirling to coat. Heat for 3-4 minutes until hot enough to sizzle water drops instantly.
  3. Pat ham steaks dry with a paper towel to help the glaze stick better. Brush one side lightly with the glaze mixture.
  4. Place ham steaks glaze-side down on the hot grill pan. Cook for about 3-4 minutes until grill marks appear and the glaze caramelizes. Do not move them too soon.
  5. Flip the steaks using tongs or a spatula, brush the other side generously with glaze, and cook for another 3-4 minutes until heated through and sticky with a nice char.
  6. If using pineapple rings, add them to the pan during the last 2 minutes of cooking and sear until caramelized on both sides.
  7. Remove ham steaks from the pan and let rest for 2 minutes before serving.

Notes

If glaze starts to burn, lower heat and brush extra glaze to keep ham moist. Pat ham dry before glazing for better caramelization. Do not overcrowd pan to avoid steaming. Rest ham steaks after cooking to redistribute juices. Can substitute pineapple preserves with fresh pineapple juice thickened with cornstarch. For low-sugar version, reduce brown sugar or use sugar substitute.
