  • 3 pounds chuck roast
  • 2 cups low-sodium beef broth
  • 1 large onion, thinly sliced
  • 2 tablespoons Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Mashed potatoes (store-bought or homemade)

Instructions

  1. Season the chuck roast generously with salt, pepper, and dried thyme. Let it sit for about 10 minutes.
  2. Heat a skillet over medium-high heat and sear the roast on all sides until browned.
  3. In the slow cooker, layer the sliced onions and minced garlic. Place the seared beef on top.
  4. Pour the beef broth and Worcestershire sauce over the beef. Cover and set the slow cooker to low for 8 hours or high for 4-5 hours.
  5. About 20 minutes before the cooking time is up, melt the butter in a small bowl and mix it with the flour to form a smooth paste. Stir the paste into the slow cooker and let it thicken.
  6. Check for doneness; the beef should be fork-tender and easy to shred. If not, cook for another 30 minutes.
  7. Slice or shred the beef and serve it over a bed of mashed potatoes, spooning the rich gravy over the top.

Notes

Searing the beef adds depth of flavor. Adjust gravy thickness with additional beef broth if needed. This dish tastes even better the next day.
