  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1/2 cup dry red wine (optional)
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • French rolls or hoagie buns
  • Provolone or Swiss cheese slices (optional)
  • Horseradish sauce or Dijon mustard (optional)

Instructions

  1. Pat the chuck roast dry with paper towels. Season all sides generously with kosher salt, black pepper, garlic powder, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Sear the roast on each side for 3-4 minutes until a rich brown crust forms. Transfer the roast to the slow cooker.
  3. In the same skillet, reduce heat to medium and sauté sliced onions and minced garlic for 2-3 minutes until softened and fragrant. Pour this mixture into the slow cooker over the roast.
  4. Add beef broth and red wine (if using) to the slow cooker. Stir in Worcestershire sauce and dried thyme. Adjust salt and pepper to taste. The liquid should come about halfway up the roast.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours until the meat is fork-tender and easily shredded.
  6. Remove the roast and set aside to rest. Strain the cooking liquid through a fine mesh sieve into a saucepan. Skim off excess fat. Simmer the au jus over medium heat for 5-10 minutes to concentrate flavors. Season to taste.
  7. Thinly slice the beef against the grain. Toast the rolls if desired, then layer with beef slices and cheese. Warm briefly to melt cheese if preferred.
  8. Serve sandwiches hot with bowls of au jus for dipping. Add horseradish sauce or mustard if desired.

Notes

Searing the beef before slow cooking adds flavor and texture. Keep the slow cooker lid closed during cooking to maintain temperature. Strain and simmer the au jus for best flavor and texture. Slice beef thinly against the grain for tenderness. To thicken au jus, whisk in a cornstarch slurry and simmer until thickened.
