  • 4 slices (about 4 oz / 115g) smoked Gouda cheese
  • 2 medium yellow onions, thinly sliced
  • 2 tablespoons (28g) unsalted butter
  • 1 tablespoon (15ml) olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon garlic powder (optional)
  • 4 hamburger buns, slightly toasted
  • Optional toppings: lettuce, tomato slices, pickles, burger sauce

Instructions

  1. Caramelize the onions: Heat 2 tablespoons unsalted butter and 1 tablespoon olive oil over medium-low heat in a skillet. Add thinly sliced onions and a pinch of salt. Stir occasionally and cook slowly for about 25 minutes until golden brown. Set aside.
  2. Prepare the burger patties: In a large mixing bowl, combine ground beef, garlic powder (if using), salt, and pepper. Mix gently and divide into 4 equal portions. Shape into patties about ¾ inch thick, making a slight indentation in the center of each.
  3. Cook the burgers: Heat skillet over medium-high heat with a drizzle of olive oil if needed. Cook patties 4-5 minutes per side for medium doneness (160°F internal temperature). During the last 2 minutes, place a slice of smoked Gouda on each patty and cover the pan to melt the cheese.
  4. Toast the buns: While cheese melts, toast hamburger buns cut-side down in a separate pan or grill for 2-3 minutes until golden and crisp.
  5. Assemble the burgers: Spread desired condiments on buns. Place melted Gouda burger patty on bottom bun, top with caramelized onions and optional toppings. Crown with top bun and serve immediately.

Do not rush caramelizing onions; low and slow heat is key for sweetness. Press a small dent in patties to prevent puffing. Avoid pressing burgers while cooking to keep them juicy.
