  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ¾ cup (180ml) whole milk, room temperature
  • ½ cup (160g) raspberry jam or preserves
  • 1 tablespoon lemon juice (optional, for tartness)
  • 1 cup (230g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 2 teaspoons vanilla extract
  • 23 tablespoons heavy cream
  • Red gel food coloring
  • Red gel icing or edible ‘blood’ for the bite marks
  • Plastic vampire teeth (optional, for spooky presentation)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, use an electric mixer to beat the butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined—don’t overmix!
  6. Divide the batter evenly among the liners, filling each about ⅔ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
  8. Mix the raspberry jam with lemon juice if desired. Spoon into a piping bag or zip-top bag.
  9. Use a small spoon or knife to create a hole in the center of each cupcake. Pipe the raspberry filling into the hole.
  10. Beat the butter until creamy, then gradually add powdered sugar. Mix in vanilla and heavy cream until smooth. Add red gel food coloring to achieve the desired color.
  11. Frost the cupcakes using a piping bag or spatula. Add bite marks with red gel icing or edible ‘blood.’ Optional: Add plastic vampire teeth for an extra spooky touch.
