  • 4 oz (115g) cream cheese, softened
  • 1 cup (90g) rolled oats
  • 1/2 cup (50g) almond flour
  • 23 tbsp (30-45ml) honey or maple syrup
  • 1/2 cup (75g) fresh strawberries, finely chopped and patted dry
  • 1 tsp (5ml) vanilla extract
  • Pinch of salt
  • 1/4 cup (45g) white chocolate chips, for drizzle (optional)

Instructions

  1. Wash and pat dry the strawberries. Chop finely and set aside.
  2. In a large mixing bowl, combine softened cream cheese, rolled oats, and almond flour. Stir until partially combined.
  3. Add honey or maple syrup, vanilla extract, and a pinch of salt. Mix until a thick, sticky dough forms. Adjust consistency by adding more honey or almond flour as needed.
  4. Gently fold in the chopped strawberries until evenly distributed.
  5. Scoop out tablespoon-sized portions and roll into balls using clean hands. Place on a parchment-lined baking sheet or plate.
  6. Chill bites in the fridge for 10-15 minutes to firm up, or 5 minutes in the freezer if in a rush.
  7. Melt white chocolate chips in a microwave-safe bowl in 20-second increments, stirring until smooth.
  8. Drizzle melted white chocolate over chilled bites. Return to fridge for 5 minutes to set.
  9. Serve straight from the fridge, or let sit at room temperature for 5 minutes for a softer texture.

Notes

For best texture, use dry strawberries and chill the dough before rolling. You can substitute almond flour with oat flour or graham cracker crumbs for nut-free bites. Vegan and gluten-free adaptations are easy. Double the batch and freeze for grab-and-go snacks. The white chocolate drizzle is optional but adds a dessert-like touch.
