  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened (preferably Kerrygold)
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon fresh lemon zest
  • About 1 tablespoon natural emerald green food coloring (adjust for desired color intensity)
  • For Frosting:
  • 1 cup (226g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 3 tablespoons (45ml) heavy cream
  • 1 teaspoon vanilla extract
  • A few drops natural emerald green food coloring
  • For Gravity-Defying Structure:
  • About 6 wooden skewers or cake dowels, trimmed to size
  • Wax paper or parchment for protecting cake board

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment circles.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3–5 minutes.
  4. Beat in eggs one at a time, fully incorporating each before adding the next. Mix in vanilla extract and lemon zest.
  5. Alternately add dry ingredients and buttermilk to the butter mixture in three parts, starting and ending with dry ingredients. Mix gently on low speed until just combined.
  6. Stir in natural emerald green food coloring until batter is a consistent jewel-toned green.
  7. Divide batter evenly between prepared pans and smooth tops. Bake 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool cakes in pans for 15 minutes, then turn out onto wire racks to cool completely.
  9. Prepare frosting by beating softened butter until creamy. Gradually add powdered sugar, beating on low. Add heavy cream and vanilla extract, then beat on medium-high until fluffy. Add green food coloring to match cake layers.
  10. Place one cake layer on cake board or plate. Spread a thick, even layer of frosting on top. Insert wooden skewers or cake dowels vertically for support.
  11. Place second cake layer atop the first. Apply a crumb coat over entire cake and chill for 20 minutes.
  12. Finish frosting the cake with a smooth or textured finish using an offset spatula.
  13. Cut small semicircles or notches in each cake layer where dowels/skewers will pass through to create the floating effect. Balance layers carefully to appear to hover or lean.
  14. Chill cake for at least one hour before serving to set structure. Bring to room temperature before slicing.
