Ingredients

Scale
  • 2 medium-sized sweet potatoes, peeled and sliced into 1/4-inch rounds
  • 2 tablespoons unsalted butter, melted (or coconut oil for dairy-free option)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped pecans (or walnuts as a substitute)
  • Pinch of salt
  • Maple syrup for drizzling (optional)

Instructions

  2. Peel the sweet potatoes and slice them into 1/4-inch rounds. Arrange them in a single layer on the baking sheet.
  3. Melt the butter and brush it generously over the sweet potato rounds. Sprinkle each round with a pinch of salt.
  4. In a mixing bowl, combine brown sugar, cinnamon, and chopped pecans. Stir until evenly coated.
  5. Spoon the cinnamon-pecan mixture onto each sweet potato round, pressing slightly to help it stick.
  6. Bake for 20-25 minutes, or until the sweet potatoes are tender and the topping is golden brown.
  7. Optional: Drizzle a little maple syrup over the rounds before serving for extra sweetness.
