  • 1 can (11.2 oz / 330 ml) Guinness stout beer
  • 34 sprigs fresh rosemary
  • 4 garlic cloves, minced
  • 1 large yellow onion, sliced
  • 2 medium carrots, cut into chunks (optional)
  • 1 cup (240 ml) beef broth or stock, low sodium preferred
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • A few sprigs fresh thyme (optional)

Instructions

  1. Pat the lamb shanks dry with paper towels and season generously with salt and pepper. (5 minutes)
  2. Set the Instant Pot to ‘Sauté’ mode and heat olive oil. Add sliced onions and cook until translucent, about 3–4 minutes. Add minced garlic and cook for another 30 seconds, stirring constantly. (Total 5 minutes)
  3. Push onions to the side, increase heat slightly, and brown lamb shanks on each side for about 3 minutes until golden brown. (10–12 minutes)
  4. Pour 1/4 cup (60 ml) Guinness to deglaze the pot, scraping browned bits off the bottom with a wooden spoon. (2 minutes)
  5. Stir in tomato paste until incorporated. Pour in remaining Guinness and beef broth. Add rosemary, thyme, carrots, and a pinch more salt and pepper. Ensure liquid covers meat about halfway. (3 minutes)
  6. Seal Instant Pot lid and set to ‘Pressure Cook’ on High for 45 minutes. It takes about 10–15 minutes to come to pressure before cooking begins. (Total 1 hour)
  7. Let pressure release naturally for 10 minutes, then quick release remaining pressure carefully. (10–15 minutes)
  8. Remove lamb shanks and set aside. Switch Instant Pot to ‘Sauté’ and simmer sauce for 5–7 minutes to thicken. Adjust seasoning if needed. (7 minutes)
  9. Serve lamb shanks with Guinness-rosemary sauce spooned over and garnish with fresh rosemary if desired. (2 minutes)

Notes

Dry meat before browning to ensure good sear. Don’t skip deglazing to incorporate flavorful browned bits. Use natural pressure release for tender meat. Adjust seasoning after cooking. For thicker sauce, mix 1 tsp cornstarch with 2 tsp cold water and stir into simmering sauce.
