  • 1 cup (200 g) granulated sugar
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • 2 ¾ cups (345 g) all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 8 oz (226 g) cream cheese, softened
  • ½ cup (60 g) powdered sugar
  • ½ tsp vanilla extract
  • ¾ cup (150 g) strawberry preserves (or fresh mashed strawberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2 minutes). Add the egg and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, mixing until a soft dough forms. Don’t overmix.
  4. In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  5. Scoop 1 tablespoon of cookie dough onto your prepared baking sheet. Flatten slightly and add a dollop (about 1 teaspoon) of the cheesecake mixture on top. Add a small spoonful of strawberry preserves and swirl gently using a toothpick or knife.
  6. Bake for 12–15 minutes, or until the cookies are just set and slightly golden around the edges. They’ll look a little soft, but that’s perfect—don’t overbake.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
