Ingredients

  • 1/4 cup basil pesto
  • 1 cup cooked chicken, shredded or diced
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: fresh basil leaves, grated Parmesan, balsamic glaze

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Brush each flatbread lightly with olive oil to create a golden, crispy crust.
  3. Spread about 2 tablespoons of pesto evenly on each flatbread using the back of a spoon.
  4. Sprinkle the shredded or diced chicken evenly over the pesto layer.
  5. Add a generous layer of shredded mozzarella cheese, around 1/2 cup per flatbread.
  6. Scatter the halved cherry tomatoes on top for a burst of freshness.
  7. Season with a pinch of salt and pepper, then bake in the oven for 10-12 minutes or until the cheese is melted and bubbly.
  8. Optional: Once out of the oven, top with fresh basil leaves, grated Parmesan, or a drizzle of balsamic glaze.
  9. Serve immediately while the flatbread is warm and the cheese is gooey.
