A cozy and nourishing breakfast bowl featuring creamy cottage cheese, ripe bananas, and a luscious honey drizzle, perfect for Valentine’s Day or any special morning.

Ingredients

Scale
  • 1 cup (240 ml) small-curd, firm cottage cheese
  • 1 large ripe banana, sliced or mashed
  • 2 tablespoons (30 ml) raw or organic honey
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • A pinch of cinnamon (optional)
  • 2 tablespoons (30 grams) chopped nuts (walnuts or pecans, optional)
  • A handful of fresh berries (optional)
  • A small pinch of lemon zest (optional)

Instructions

  1. Peel and slice the banana into thin rounds or mash gently with a fork until smooth but still a bit chunky. Measure out the cottage cheese, honey, vanilla extract, cinnamon, and optional toppings. (Approx. 5 minutes)
  2. In a mixing bowl, combine 1 cup (240 ml) of cottage cheese with 1/2 teaspoon (2.5 ml) vanilla extract and a pinch of cinnamon. Stir gently to blend the flavors without breaking down the curds too much. The mixture should look creamy and inviting.
  3. Spoon the vanilla-infused cottage cheese into your serving bowl or jar. Layer the sliced or mashed bananas on top evenly. If using mashed bananas, spread gently to create a smooth layer.
  4. Drizzle 2 tablespoons (30 ml) of honey over the bananas in a slow, zigzag motion so it decorates the bowl beautifully. The honey should glisten and create a sticky, sweet contrast.
  5. Sprinkle chopped nuts (about 2 tablespoons / 30 grams) and fresh berries if you like. Add a small pinch of lemon zest on top to brighten the flavors. This step is optional but adds a nice texture and color pop.
  6. Give the bowl a quick sniff—if you want, add a little more cinnamon or honey on top. Serve immediately or chill for 10 minutes if you prefer it cool.

Notes

If cottage cheese feels watery, drain slightly before mixing. Use ripe bananas for natural sweetness. Warm honey slightly if too thick for easy drizzling. Nuts add crunch but can be omitted for allergies. Can substitute dairy-free ricotta or thick coconut yogurt and maple syrup for a vegan version.
